A rare and enigmatic selection from Huila, Colombia. Papayo’s exact origins remain somewhat mysterious — some regard as a unique local mutation, while others place it closer to the Ethiopian landrace group associated with Pink Bourbon. What is certain is its rarity and distinctive character.
This lot began as a secret find during Captain Mancini’s expeditions through the Colombian Andes. With the expertise of producer Henry Bonilla, the variety was carefully cultivated and brought to perfection at 6,070 ft. Grown in mineral-rich andisols formed from ancient volcanic ash, the shrubs draw magnesium, potassium, and iron that translate into extraordinary aromatic clarity. Fully washed, the cup is clean, silky, and perfectly balanced with juicy complexity.
Tasting notes of tropical fruit, caramel, subtle vanilla, panela, and bright aromatics unfold with elegance and depth.
